What to cook for lunch from raw oyster mushrooms. The best recipes for oyster mushrooms

Oyster mushrooms are very tasty mushrooms that differ from their "wild" counterparts in relative safety, while not inferior to them in taste. They can become a full-fledged substitute for meat, if necessary, to abandon it, both due to diet (oyster mushrooms contain very few calories), and the nutritional system in general (for example, vegetarianism). Recipes for cooking oyster mushrooms are varied; they can surprise even experienced chefs with unexpected solutions and combinations. At the same time, oyster mushrooms practically do not require complex preparatory processing, which greatly facilitates the process of their preparation.

General rules for the preparation of mushrooms

When choosing oyster mushrooms in a store, you should pay attention to the color of the caps - young mushrooms are usually painted in a dark gray or brown shade, and old ones can acquire a purple or ash tint. It is advisable to choose mushrooms on which there are no traces of mechanical or other damage, pests, diseases. It is better to transfer purchased oyster mushrooms from store packaging to glass or plastic dishes in order to prolong life, preserving their taste.

Fresh oyster mushrooms are distinguished by uniform color and the absence of damage, stains

As a rule, in stores these mushrooms are sold together with pieces of mycelium, therefore, before boiling or frying oyster mushrooms, you need to cut off all excess, remove possible pieces of the substrate. There is no need to peel off the caps; this does not affect the taste of the mushrooms. Peeled oyster mushrooms are washed in running water and then crushed to the desired size, following the recommendations of a particular recipe.

Oyster mushrooms differ from most other mushrooms in that they do not require preliminary cooking. They can be sent straight away to be fried or stewed. If they are part of the first course, it is important to know how much you need and you can cook oyster mushrooms, because if you cook them for too long, they will not only lose most of their nutrients, but can also become "rubbery". To avoid this, oyster mushrooms are boiled for no longer than a quarter of an hour.

Sometimes, on cold winter evenings, you really want to taste something unusual. Who would refuse if he was offered pickled oyster mushrooms? Almost no one, not even the most avid gourmets. You can prepare a "masterpiece" in just 24 hours.

Oyster mushrooms are put in jars. The free space is filled with brine, leaving some room for vegetable fat. The containers are placed in the basement or refrigerator. In a day, the appetizer is ready.

As practice shows, oyster mushrooms are widely used in cooking, and cooking recipes are available even to inexperienced housewives. To keep them always on the dinner table, you can grow them yourself.

Mushroom "garden" in the basement

To harvest 365 days a year, it is important to know the basics of how to grow oyster mushrooms yourself. It's actually not that hard if you stick with simple tips... First of all, you need to prepare a room in which a stable microclimate must be maintained. The optimum temperature is not higher than 20 degrees, not lower than 10. Humidity is within 85 - 90 percent. Purity. There should be no pests and mold on the walls. To achieve these goals, you may need to do a general cleaning of the basement and disinfection.

The next step is to purchase a special substrate in bags for the oyster mushroom, which must be further processed. The following options apply:

  1. Hydrothermia is the use of hot water.
  2. Pasteurization - the wet substrate is blown over with steam.
  3. Xerothermia - hot steam is poured over dry soil.

Due to this, the substrate is filled with oxygen and becomes looser. The root system of the fungus will develop perfectly in it.

Oyster mushroom mycelium purchased in advance is placed in the soil in small layers. For example, 6 cm of soil is 0.5 cm of mushroom spores. The upper level must be covered with earth. The bags are tied, leaving a small hole at the top. In a checkerboard pattern, cuts are made up to 2 cm, every 15 cm and folded in the basement.
The incubation period is approximately 15 days maximum.

The room temperature should be between 18 and 22 degrees, with regular ventilation.

On the 4th day, white filaments of mycelium appear, which eventually penetrate the entire thickness of the soil. In order for the cultivation of oyster mushrooms to be successful, at the end of the incubation period, the following steps are taken:

  • lowering the temperature in the basement to at least 10 degrees;
  • lighting for at least 10 hours a day;
  • artificial increase in humidity by spraying the walls and floors of the room;
  • airing (4 times a day).

Do not allow liquid to come into contact with the substrate, so as not to affect the growth of fungi.

If everything is done according to the rules, pretty soon the rudiments of new plants appear in the slot. Within 15 days, more and more fruits will appear, which quickly develop, turning into pretty "bouquets". It is better to collect them not by cutting, but by twisting them out of the ground. The photo shows the magnificent oyster mushrooms grown in the basement.

When the first harvesting wave passes, you should thoroughly ventilate the area. After 2 weeks, new shoots appear. The principle of operation is the same: temperature, humidity, light, fruit harvesting. There can be several such periods. When the mushroom blocks no longer bear fruit, they are replaced by others. The used substrate is an excellent fertilizer for the backyard area. suburban area... As you can see, growing oyster mushrooms on your own is available to everyone. The main thing is to have the desire, set a goal, act and be patient.
